Cornbread "Fish"


What better bread to serve with perch than a cornbread perch!  I purchased a cast iron cornbread baker from Lodge cast iron that has spaces for five perch. 


love baking cornbread, but this seemed so appropriate to serve nice little crunchy bites of cornbread alongside the fish. I used my standard cornbread recipe, but you could certainly mix up hush puppy batter and it would work as well.

In a medium mixing bowl, combine 1 cup self-rising cornmeal, 1 cup buttermilk and 2 T. bacon drippings.

Preheat oven to 375 degrees. Lightly spray pans with baking spray or brush inside of pan shapes with melted bacon drippings.

Spoon batter into pans and bake for 18 - 22 minutes until golden brown.
