Snow Day Cake


Here in North Alabama, we received a "dusting" of snow overnight. Some years, we have nary a snowflake; some years we will have several snow events that can leave an inch or so up to 4 or 5 inches. The fun thing about our snow is that it normally drops just enough snow for us to have fun for a day or two and then it melts and we go about our business. The low at my house this morning was 16 degrees.  The predicted high next week will be in the 70s!  So, I take advantage of the snow days we do have.  And here, is the result!

I baked a boxed white cake mix according to package directions and let it cool completely.

While the cake layers cooled, I mixed up a buttercream frosting.

3 3/4 cups powdered sugar
1 stick softened butter
4 - 5 T. milk
1/2 t. vanilla extract

Mix together all ingredients in a large bowl with a hand mixer. Add a little more milk if necessary to allow a smooth frosting.

You can leave the frosting as is or add food coloring to make any color you'd like.

For this ice blue frosting, I added 5 drops of blue and 1 drop of red food coloring and mixed with the mixer until it was all blended together.

Place the bottom layer on a cake plate. Place strips of waxed paper under the edges of the cake layer. This will keep the frosting off the plate. Smooth frosting over the top of the layer of cake and then place top layer and repeat with the frosting. Now, carefully smooth frosting over the sides of the cake.

I used Betty Crocker snowflake sprinkles to decorate the top of the cake.  

Now all you have to do is wait for the snow to arrive !!!
